Here is another thing you can do that you may not have known. You can make awesome tacos from summer squash like zucchini. Let's face it, tacos are only a good as the seasoning you apply which is why bean tacos and other meat substitutes can taste better than the meat ones.
The fact is that meat can't take the seasonings in as well.
So I have a bunch of squash ripening now along with a variety of peppers so I decided to try. I cut the seeds out of the squash and then made 3/4 inch or smaller chunks out of them. I added them to some onions and a mix of Anaheim and jalapeno peppers and let the whole bunch saute for about 15 minutes. I then added paprika, chili powder, cumin, salt and pepper until the smell was TACO.
They were really good with some guacamole on Trader Joe's Organic Whole Wheat and Corn tortillas. Making tortillas is easy as well, and allows you to cut down the oil used.
So what are you waiting for? Get some squash and make some of the best tacos you've had.
