Buckwheat Banana Pecan Pancakes
Mash 2 bananas in a mixing bowl. Add 2 cups of Buckwheat flour, 1 cup brown rice flour, 3 tbsp. baking powder, 1 tsp vanilla, 1 tsp cinnamon, 1 pinch salt, 1/3 cup melted coconut oil, 1/2 cup chopped pecans and just enough rice or almond milk to bring the mix together so that it is still thick. I lightly oil the griddle on my stove and use a standard ladle for each pancake. This makes 8 6-7 in pancakes.
2- ripe bananas
2 cups Buckwheat Flour
1 cup Brown Rice Flour
3 tbsp. Baking Powder
1 tsp Cinnamon
1 tsp vanilla
1/3 cup coconut oil
1 pinch salt
1/2 cup chopped pecans
1 1/2 - 2 cups Rice or Almond milk.
These are wheat, eggs and dairy free. Since that is most of the inflammatory allergens they are easy to digest. The buckwheat and brown rice flours have more protein than even whole wheat flour. The coconut oil is a very healthy fat. There is no refined sugar because the sweetness from the bananas is enough and you get some added potassium. You can't come up with enough ways to add cinnamon to your diet. It has tons of health benefits.
