Not Boring Salad Recipe

All of the talk about switching your dressing for salsa got me thinking about a perfect salad for just that use. SO....

Here's what is for dinner tonight.

Southwest Inspired Chopped Salad

Makes 2 Huge Salads

6 cups of Mixed Greens (I use half Organic Babay kale and Half Organic Spring Mix)
2/3 cup Sundried Tomatoes (Not in oil)
1/4 Kalamata Olives
1 Cup Organic Corn (1 15 oz can drained if you are using canned)
1 15 oz can Organic Black Beans
1 cup Crimini Mushrooms

1 tsp garlic powder
1 tsp onion powder
1 tsp Paprika
1 tsp Chili powder
1 pinch salt

Salsa for dressing

Chop all the greens to less than 1 inch pieces. Chop the sundried tomatoes, mushrooms and olives into 1/4 inch pieces. Drain and rinse the beans and then add all of the spices and stir well.

Mix all of the salad ingredients together and toss well. Split into 2 large bowls and dress with salsa or a spicy viniagrette if you wish.
